5 Quick & Easy Family Recipes

This article will outline five quick and easy recipes for you and your family to feast together. The recipes range from hearty, meaty, vegetarian and seafood to make the recipes as varied and adventurous as possible.

Recipe 1

Our first quick and easy family recipe falls into our hearty group and is the perfect meal for the on-coming winter.  What is nice about this recipe is that as it is so easy the whole family can get involved in making the meal together and, with just four key ingredients being needed, it’s a steal at the super market. 

Our first recipe is a butter bean and chorizo stew with a 5 minutes preparation time and 15 minutes cook time we would be making this for a family of four, but of course you can easily upscale the ingredients for a bigger family if needed. 

Ingredients needed:- 200 grams of cooking chorizo- Two 400 gram cans of chopped tomatoes- Two 400 gram cans of drained butter beans – One tub of fresh pesto 

Directions:

With all of your ingredients, and little chiefs, ready – let’s get cooking!

Step 1: Get a large saucepan ready and over a medium heat 

Step 2: Slice up your chorizo, tip them into the saucepan and gently fry for 5 minutes

Step 3: Add your chopped tomatoes and butter beans getting them up to a boil before simmering for 10 minutes. 

Step 4: Mix in the pesto 

Step 5: Enjoy!

Recipe 2

Recipe two is a lovely yet simple spiced carrot and lentil soup which is quick to cook and a nice winter treat for the family whether on its own or as a starter to a full course. As before, should you be cooking for a family larger than four then just upscale the ingredients as needed. Let’s dive in!

Ingredients needed:- Two teaspoons of cumin seeds- A pinch of chilli flakes- Two tablespoons of olive oil- 600 grams of carrots washed and grated- 140 grams of split red lentils- One litre of hot vegetable stock – one cube in hot water would be enough- 125 ml of milk – diary free if your preference – Plain yogurt and naan bread to serve

Directions:

Step 1: Dry heat your 2 teaspoons of cumin seeds and chilli flakes for around one minute

Step 2: Take out half, we will use them later for seasoning, and add your olive oil, carrots, split red lentils, vegetable stock and milk to the pan to boil. 

Step 3: Simmer for 15 minutes until the lentils have swollen and softened

Step 4: For a smooth soup, whizz with a stick blender or leave chunky. 

Step 5: Season with the other half of your cumin seeds and chilli flakes, pour out four equal bowls and add a dollop of yoghurt and side of bread to serve. Enjoy!

Recipe 3

Our third recipe is a Thai prawn curry with a 5 minutes preparation time and 15 minutes cook time.  We would be making this for a family of four, but of course you can easily upscale the ingredients for a bigger family if needed. Let’s getting cooking!

Ingredients:- One tablespoon of vegetable oil – One onion chopped- One teaspoon of fresh root ginger- Two teaspoons of Thai red curry paste- 400 grams of can chopped tomatoes- 50 gram sachet coconut cream- 400 grams of raw frozen prawns 

Directions:

Step 1: Heat oil in a medium sized pan and add in the onions and ginger cooking until soft. 

Step 2: Stir in the curry paste, cook for a further one minute, and then pour in the chopped tomatoes and coconut cream. Bring all to boil and then simmer for five minutes but add more water if it gets too thick. 

Step 3: Tip in the prawns and cook for an additional five to ten minutes depending on the size of the prawns you have. 

Step 4: Serve with some rice and chopped coriander.

Recipe 4:

Our fourth recipe is a Sweet and Sour Chicken with a 5 to 10 minutes preparation time and 15 minutes cook time. This is a unique recipe as it’s the only one on our list where you will be cooking with just a microwave – nothing quicker than that! 

Ingredients: – 9 tablespoons of tomato ketchup – 2 tablespoons of malt vinegar – 4 tablespoons of dark muscovado sugar- 2 garlic cloves, crushed- 4 skinless and boneless chicken breast cut into chunks- 1 small onion chopped- 2 red peppers cut into chunks- 227 grams can of pineapple juice- 100 grams of sugar snap peas sliced

Directions:

Step 1: Take a large microwavable dish and mix in the ketchup, vinegar, sugar and garlic with the chicken, onion and peppers. 

Step 2: Microwave, uncovered, on high for 8 to 10 minutes until the chicken starts to cook and the sauce is sizzling. 

Step 3: Stir in the pineapple pieces and sugar snap peas and return to the microwave for 3 to 5 minutes until the chicken is completely cooked. 

Step 4: Leave to stand before serving and enjoy!

Recipe 5:

Our fifth and final easy to cook recipe is a Paella with a 5 minutes preparation time and 25 minutes cook time. This the second of our seafood dishes and offers up a simple yet delicious meal for the whole family to enjoy!

Ingredients: – 1 tablespoon of olive oil – 1 onion sliced- 110 gram pack chorizo sausage chopped- 1 tablespoon of turmeric- 300 grams of long rice- 1 litre of chicken stock – 200 grams of frozen peas- 400 grams of frozen seafood mix, defrosted

Directions:

Step 1: Heat oil in a frying pan and add the leek for 5 minutes before adding the chorizo and fry to release its oils. Stir in the turmeric and rice until coated by oils before pouring in the chicken stock. 

Step 2: Bring to boil and then simmer for 15 minutes and stir occasionally. 

Step 3: Tip in the peas, cook for a further 5 minutes and then stir in the seafood to heat for a final 1 to 2 minutes. 

Step 4: Serve and enjoy!
