Family Favourites: Sultana Slice

This recipe is so simple, yet so popular and moreish. It doesn’t take long to make, and with the option of using ready-made pastry you can make it in no time at all. It keeps really well in an airtight container and makes a great addition to any lunchbox.

Ingredients

Pastry

  • 225g plain flour
  • 110g butter
  • 4tbs cold water
  • Milk and sugar

Filling

  • 110g butter
  • 110g sugar
  • 1 egg
  • 350g ​​sultanas
  • Vanilla essence

Preheat the oven to 190C and grease a 13”x9” baking tray

Method

Pastry

  • Rub the butter and flour together until well combined.
  • Add the water and bring together into a ball.
  • Chill in the refrigerator​​ for 10 minutes.

To make the filling:

  • Melt the butter in a pan.
  • Add butter and sugar to the pan and stir well.
  • Add sultanas and vanilla essence and combine.
  • Set aside.

Assembly

  • Divide the ball of pastry into two equal portions.
  • Roll out one portion and use it to line the bottom of the baking tray.
  • Spread sultana mixture over the pastry.
  • Roll out the remaining pastry and lay over the mixture.
  • Use a knife to score a criss-cross pattern on the top pastry.
  • Brush with milk and sprinkle with sugar.
  • Bake in the oven for 15 minutes
