Minced beef can often seem like a bit of a boring ingredient, and many people tend to think that its use doesn’t extend much beyond a big pan of chilli con carne. However, I have found that minced beef can actually offer a lot of options and versatility when it comes to making meals that the whole family will enjoy. Here are a few of our favourite meals made with marvellous mince.
Most kids love burgers – that’s something almost illicit about them due to their association with fast food. When using mince to make your own burgers, you are in control of what goes into them, and so you can make them as healthy (or unhealthy) as you want. Plus, homemade burgers can also be cooked in the oven if you want to avoid frying them. Using the mince as your base, you can pack the burgers with whatever flavours you like – go on, get creative. Shaping them by hand is pretty easy, or you could invest in a burger press to help you out.
Kids love lasagna! Cheese, rich tomato sauce, cheese, meat, cheese, pasta, more cheese – I mean, what is there not to love! Many people avoid lasagna because they perceive it to be time consuming and frustrating to make. However, that need not be the case. Lasagna comprises of three basic principles – tomato sauce with mince, white sauce and cheese. You can make all from scratch, or you can buy some or all of the components to help you along. It also keeps and freezes really well, so it is worth making a big portion and putting some aside for when you need a quick and easy midweek meal option.
Stuffed Baked Potatoes
These amazing potatoes do take a little more time and preparation than some of the other ideas on the list, but they are totally worth the time and effort. Start by baking the potatoes slowly so that the innards are fluffy. Once baked, remove the potato – this is best done whilst still hot, so watch your fingers – and then mix with cooked mince and your preference of spices before placing back into the empty potato skins, covering with cheese and flashing under the grill. They are very popular and very moreish, so make sure that you make plenty! They are great served with a dollop of sour cream and a crispy salad.
Crispy taco shells are a firm favourite in our house, and with shop bought taco seasoning and a packet of minced beef, they are ready in seconds. You might like to add some onion and peppers to the mix as well before loading the shells and topping with cheese. Thick potato wedges and homemade tomato salsa go down a treat with these. There are always clean plates and big smiles at our table when I serve this one up!
